Pour ce quatrième duo place à la gente masculine ; après le sud ouest, la Bretagne et l'Italie c'était direction le Grand Est avec un bloggueur alsacien de renommée culinaire j'ai nommé Fabrice! à nous le challenge de la choucroute et du kougelhopf sauf qu'entre-temps l'ami est parti à l'ouest mais alors complètement à l'ouest !! en Bretagne? Normandie? mais non au Chili où il a posé ses valises depuis quelques semaines suite à un challenge professionnel ; les plans ont changé mais pas le duo et c'est vers le restaurant argentin " Las Balsas" au fin fond de la Patagonie que nous avons jeté notre dévolu: pour rappel le duo consiste à prendre la recette d'un chef et seulement à partir de l'intitulé on invente notre propre interprétation et on poste le même jour ; un jeu sans enjeu si ce n'est de se faire plaisir !! Ingrédients
Pour la pate à tarte coco (pate sucrée Ph. Conticini)
230 g de farine
140g de beurre
1 oeuf entier
1 jaune d'oeuf
90g de sucre glace
40g de poudre de coco
4 pincée de sel fin
le zeste d'un citron
1/2 gousse de vanille
Pétrir au robot (avec la feuille!) le beurre pommade puis incorporer le sucre glace ; le mélange devient crémeux.
Ajouter le zeste de citron la poudre de coco bien mélanger ; Ajouter l'oeuf et le jaune les grains de vanille puis la farine, enfin le sel.
Former une boule et aplatir trois fois avec la paume ; reformer un boudin ; couvrir d'un papier film et direction le fridge pendant 4 heures.
Couper des tranches de boudin de pâte et étaler sur un plan fariné puis foncer des fonds de tarte ; faire cuire à blanc à four th 5/6 pendant 10 mn jusqu à une belle coloration.
Laisser refroidir.
S'il reste de la pâte on peut la congeler .
Sorbet rouge
200g de fraises et quelques framboises t
60g de sucre
1/2 jus de citron
Mixer tous les ingrédients ; passer à travers une fine passoire ; mettre la purée au fridge qui doit être bien froide.
Turbiner dans la sorbetière.
Confiture de lait
Mettre dans l'autocuiseur une boite de lait concentré (397g) ; couvrir la boite d'eau d'un centimètre .
Fermer l'autocuiseur et cuire 45mn après chuchotement de la soupape.
Sortir la boite lorsque l'eau est tiède. Laisser refroidir; ouvrir la boite et le lait concentré est devenu une confiture de lait; c'est magique!
Tuile rose
Sur un silpat verser une cuillère de glucose ; verser une goutte de sirop à la fraise . cuire à four chaud jusqu'à ce que le glucose soit fondu. Laisser refroidir à la sortie du four. Mixer pour avoir une fine poudre. Sur un papier de cuisson ou un silpat saupoudrer et faire cuire jusqu à ce que la poudre fonde; sortir du four et laisser refroidir.
Dressage
Dans un fond de tarte, étaler la confiture de lait poser une quenelle ou une boule de sorbet ; planter une tuile

Ingredients
For the pie dough
230g flour
140g butter
1 egg
1 egg yolk
90g icing sugar
40g ground coconut
4 pinch of salt
zest of one lemon
1 / 2 vanilla bean
Knead the soft butter and then add the icing sugar up to the mixture becomes creamy.

Sherbet Red
200g of strawberries and some raspberries
60g sugar
1 / 2 lemon juice

Put in the pressure cooker a can of condensed milk (397g), cover the box with an inch of water.

Pink Tile
